So, today is the day you should make yourself a gourmet meal to finish your day off right. Let me know how it works out for you!
Make the salad: While the beef roasts, make the salad dressing. In a small bowl, stir together the shallot, the juice of half the lemon, and some olive oil. Season with salt and pepper to taste. Just before serving, add the mizuna or spinach to a large bowl, and drizzle with a little bit of the dressing, tossing to coat. (You may have extra dressing.)

    These stuffed cherry tomatoes were delicious! However, hulling and stuffing 60 cherry tomatoes was a bit of a chore for the guy who had to do this.
    When I’m making french toast for a group, I turn to this baked french toast. Made with challah, almond milk, and a brown sugar topping, it’s decadant & delicious. I can’t imagine a better brunch than thick slices of banana bread alongside something savory (read on for ideas!). Made with almond flour, it’s super moist & nutty. Add in the fact that it’s easy to make & nicely spiced, and you have a loaf that checks all the banana bread boxes. It comes as no surprise that I’m crazy for these lemon pancakes, but try them, and I’m sure you will be too. The lemon juice goes perfectly with the cornmeal base. Blueberries for serving are highly recommended. 🙂 I make a carrot cake for Jack’s April birthday every year, so to me, it’s one of the first signs of spring. Slices of this moist, nutty cake would be the perfect finish to a big spring brunch. And if you’re vegan, check out this recipe. If you or one of your guests is gluten-free, these waffles have to go on the menu. The almond and buckwheat flours give them a great nutty flavor, and they’re perfectly crisp. To make my gourmet scrambled egg muffins, you first saute baby spinach, mushrooms, garlic, and onion for just a couple of minutes. Meanwhile take out any pent up aggression by beating up a dozen eggs. Combine everything then scoop the "batter" into a greased cupcake pan and place a bit of goat cheese in the middle of each one. Bake for a bit and that's it! So easy. I made this batch in my Instagram stories last night if you want some video visuals of just how easy the process is.
