I have a job that requires I eat lunch on my lap in my van pretty regularly. So, in order to avoid eating a cold sandwich, I will go to great lengths. Before leaving my office, I will heat it up the sandwich, put it in one of the Tupperware sandwich holders, wrap it in tin foil and house it in my insulated lunch bag until after my meeting when I can finally eat. Using a double boiler as described in Chef Todd’s video, combine the egg yolks with the cooled vinegar mixture and one tablespoon of cold water. Start whisking continuously as described in the video until the sauce emulsifies. Do not let it turn into scrambled eggs or you will have to start all over again.

So can I ask a stupid question guys? When did toast become a thing? I mean the fact that I actually titled this Gourmet Toast seems well, kind of silly but if you look at the recipes you can see they are not your standard butter/jelly toasts. The fact that we’re now writing recipes on how to make toast is funny but also, kind of awesome in the same token.
