I found this recipe in the Kraft Food and Family Magazine {one of my favorites}, changed it a little to use up what I already had in the pantry and it was delicious! It has a little kick from the Tex Mex Style Diced Tomatoes I used, but you can certainly use regular diced tomatoes if you don’t like the spice. Or to spice it up even more, add a jalapeno pepper while you are cooking the meat, red pepper and onions.

Divide goat cheese into 12 equal chunks and place one in middle of each muffin. Bake for about 15 minutes or until tops are firm and muffins are cooked through. Another amazing recipe and brilliant idea from Jazz! Thank you dear lady, for sharing this, it is perfect for a protein snack too! Love that it makes 12 at one time! Mushrooms and spinach are my favorite in omelettes, but I never thought about making them in egg muffins. Much easier!
