Chop the shrimp. Return the bisque to a simmer, add the shrimp and cook 2 to 3 minutes just to cook the shrimp through. Give the bisque a final taste for seasoning, pour it into warmed soup bowls and serve garnished with the orange zest and chives.
Score the skin of each duck breast in a criss-cross pattern, at least three 1/4″ deep cuts one inch apart each way. Make sure you score all the way through the fat layer, but not into the meat underneath.

That being said it is a gourmet cookbook so it is cooking above the normal everyday cooking.
One thing I learned from working in a steakhouse is to roast your veggies with tomato paste spooned over the top until they’re crispy and charred.
Cook the lentils: Stir in the tomato paste, paprika, thyme, oregano, and some freshly ground pepper, and cook about 1 minute. Add the lentils and vegetable broth, scraping up any bits at the bottom of the pot. Add a good pinch of salt. Allow the mixture to come to a boil, then reduce the heat to low and simmer about 10-15 minutes or until the lentils are tender and the mixture is thickened. Once the lentils have thickened, tear the spinach leaves and add to the pot. Remove from the heat, and stir until combined. (If you find the lentil mixture is too thick, add a little water to thin it out.) Remove and discard the bay leaf. Taste for salt, adding more if needed.

Make the blueberry puree by adding one pint of blueberries and one tablespoon of honey to a small pot on medium heat. Cook for 10 minutes, stirring frequently and use the back of a spoon to mash the blueberries up and break them down.
