Summer, oh summer! Honeyed days of golden rays and long nights of blazing sunsets and backyard gatherings that linger long into the late hours. As the sky grows darker and the warm lights from each house reflect off the creek’s constant, rippling surface, music drifts from the neighbor’s porch mingling with the smell of food being grilled, and that’s the beautiful thing about summer- you lose track of time and sometimes eat dinner at 9:30.

A regional dish you might not have heard of, goetta is a very popular breakfast sausage in Cincinnati, Ohio. Similar to scrapple and made out of either pork or a mix of pork and beef, goetta also contains oats, bay leaves, thyme, rosemary and onion. Goetta typically comes in a round loaf and can be served like any other breakfast meat, although most like to eat it plain —and it's super easy to make.

A fresh twist on the French classic, Chicken Dijon is infused with minced rosemary and simmers to perfection in a creamy white wine Dijon mustard sauce. Ingredients 4 chicken cutlets (1 lb.) 1/4 cup all-purpose flour 2 1/2 teaspoons minced fresh rosemary 2 tablespoons extra-virgin olive oil 1 tablespoon unsalted butter 1 1/2 cups white wine or chicken broth 2 tablespoons Dijon mustard 2 cloves garlic, minced 12 oz. pkg. fresh whole green beans 1/2 cup heavy cream Kosher salt and freshly ground black pepper For more sauce, double the amount of cream.Do not substitute cooking wine for the white wine.Remember that butter will smoke at a high temperature, so it is time to add the chicken to the pan once the butter is melted and foamy.
Combine warm water, yeast and sugar in a mixing bowl and let sit for about 3-4 minutes, until yeast is bubbling up. Add in oil, salt and flour. Start with 2 1/2 cups of flour, then add more until the dough cleans the sides of the mixing bowl. (I use a mixer for this part as it makes it just so much easier!) Continue mixing for an additional 3-4 minutes, then cover with plastic wrap and let sit in a warm place for 15 minutes. In cold weather, I like to turn my oven on for about 3 or 4 minutes, then turn it off and let my dough rest in the oven.
