This is not an ideal organization, and if is further confused by listing the first two on a separate page from the other chapters in the Table of Contents. And, these first two sections are presented differently from the rest of the book, in that recipes in these sections are given with a full page picture.
Take a browse or jump ahead to a section. There are so many recipes to choose from – salads, tacos, casseroles, soup and easy one pot and sheet pan dinners. I hope you find some new small-batch recipes to try!

Most of the time we enjoy them on toast, spread with butter of course, and smashed avocado. But on the particular day this sandwich was created, I had a seven year old with a special request for a morning sandwich! A quick visit to the fridge had me pulling out the Pepper Jack, spinach, and eggs! Eggs- We use large eggs for our sandwiches.Butter- Salted is our go-to. Cheese- I am normally a cheddar girl, but this combo calls for pepper jack. Vegetables, optional- I will not force you to add veggies to your sandwich, but you should at least give the tomatoes a try. If my picky 7 year old loves this sandwich, you will too! Bread- Whole wheat or grain bread is our favorite flavor, but we have also been known to make this with white bread.

The transformation of flavor that happens when you roast root vegetables in olive oil with nothing more than salt and pepper provides the basis of the whole dish's flavor profile. These near-charred bits of carrot and onion are a little smoky (you could totally amp the smoke factor up and add smoked paprika or use salt instead of regular, if you wanted).
Given the size and scope of the book, it's unfortunate that photos couldn't be included. The illustrations, used as fillers of blank spaces between recipes, weren't helpful in any way (simple line drawings of eggs, milk bottles, herbs, etc.). A detailed drawing of how the dish will turn out, or a small photo, would have been more useful.
Make the shell components the day before, assemble the “pavs” before dinner, let them sit in the fridge, and they’re ready to go when the time is right. Don’t quote me on this, but I hear they’re even good for breakfast!
